2 Ways with Pomegranate Juice: POM Wonderful Recipe ReDux Challenge

I’m one of those crazy people who love a good new year’s resolution. I know, I know… many people think new year’s resolutions are silly and most resolutions will dissolve within a few weeks (if not a few days!). But, I am an optimist and I love the idea of starting with a clean slate each January 1st.

One of my resolutions this year is to get more fruit on a daily basis! I love vegetables and will unconsciously gobble a plate of sautéed kale or roasted broccoli. But, fruit… it’s not often an automatic for me, and I definitely make the conscious decision to eat fruit when I do.

When I saw that the latest Recipe ReDux recipe challenge was to create something with POM Wonderful pomegranate juice, I thought… okay! I’d love to get more antioxidant-rich pomegranate in my diet.

First of all, pomegranates are rich in antioxidants, potassium and vitamins C and K. And, POM Wonderful juice is a great way to get those nutrients. In fact, POM Wonderful 100% Juice is powered by antioxidants. The pomegranate is whole-pressed, meaning a unique blend of polyphenol antioxidants from two whole pomegranates–including its fruit, pith and rind–is found in each 8 oz. bottle. Plus, every bottle packs as much potassium as a banana. And, its deep red color? It makes me want to mix it with sparkling water. Right. That. Second.

While I can think of a lot you can do with pomegranate juice–from marinades and sauces to smoothies and sparkling water “sodas”–these are the recipes that I decided to try. And, I’m glad I did.

Butter Lettuce Salad w/ Feta, Pepitas and Pomegranate Vinaigrette {Recipe}


  • Dressing:
  • 1/2 cup POM Wonderful 100% Pomegranate Juice
  • 4 Tbsp. extra-virgin olive oil
  • 4 Tbsp. balsamic vinegar
  • 3-4 tsp. maple syrup
  • 2 tsp. Dijon mustard
  • Salad:
  • 4-5 cups butter lettuce, torn
  • 1 cup cherry tomatoes, halved
  • 1 cup pickled cucumbers (or English cucumber)
  • 1 avocado, cubed
  • 4 Tbsp. pumpkin seeds
  • 1/4 cup Feta cheese, crumbled
  • 2 Tbsp. pomegranate arils (optional)
  • Salt and pepper, to taste


  1. In a small bowl, combine all ingredients for the dressing; mix with whisk until well combined. Set aside.
  2. In a large bowl, combine all salad ingredients (except Feta cheese and arils, if using). Pour on dressing; toss to coat well. Top with Feta cheese and pomegranate arils. Add salt and pepper to taste, if desired. Makes 4 servings.
