Mediterranean Hummus Pizza

You know I love that May is Mediterranean Month. And if you know me well, you also know that I love pizza. Veggie pizza, cheese pizza, hummus pizza. Don’t know about hummus pizza? Oh, well, you should. It’s delicious.

This Mediterranean-style dish is super-simple and comes together in a matter of minutes. It’s like a salad, but better. And, it provides a whole grain and healthy dose of proteins, veggies and heart-healthy fats.

Simply brush a whole grain tortilla with a little olive oil and toast until crispy. Then, slather on a generous layer of hummus. I used Sabra Sun-Dried Tomato Hummus. You could use Sabra’s Caramelized Onion Hummus or their Classic Hummus, but the Sun-Dried Tomato Hummus imparted a bit of tomato-y tastiness. I topped with mixed greens, thinly sliced cucumbers and cherry tomatoes, black olives, an ounce of feta cheese, herbs and a drizzle of olive oil. Then, toast until warmed and you have a delicious salad pizza. I told you… it’s like a salad, but better.

I’m going to venture that it’s the hummus that makes it better than a salad. Hummus is a high-fiber plant-based protein that is delicious. It’s a perfect Mediterranean protein that pairs with all kinds of diets, including vegan and gluten-free. Plus, the protein in hummus can help with weight maintenance (thanks to the protein) and has even been shown to even help lower cholesterol.

Mediterranean Hummus Pizza


  • 2 WW tortillas, lightly brushed with olive oil
  • 4-5 Tbsp. Sabra sun-dried tomato hummus or another flavor hummus
  • 2 cups mixed greens
  • 1 small cucumber, thinly sliced
  • 8-10 cherry tomatoes, halved or thinly sliced
  • 3 Tbsp. Kalamata olives
  • 2-3 oz. feta cheese, crumbled
  • ½ tsp. olive oil
  • ½ tsp. Greek oregano or Italian seasoning


  1. 1. Toast tortillas until crunchy.
  2. 2. Spread hummus evenly on tortillas. Top hummus with a layer of mixed greens, then top with cucumber and tomato slices, olives and feta cheese. Drizzle olive oil on top, then sprinkle with herbs.
  3. 3. Toast pizzas on top of foil-lined sheet until warm. Makes 2 servings.
