7 Species Salad + Tu B’Shevat

Today is Tu B’Shevat, a Jewish holiday celebrating the New Year for Trees. It is customary to plant a new tree, or perhaps even host a Seven Species Seder. The Seven Species include wheat, barley, grapes, pomegranates, figs, olives and dates.

Or, you could just make my 7 Species Salad, rich in fruit and the whole grains barley and freekeh. Freekeh is a young green wheat that lends a nuttiness to this fruity salad. This salad pairs perfectly with roast chicken or fish, or top with feta cheese to make a delicious dish on its own.
7 Species Salad


  • 1.5 cups barley, cooked
  • 1.5 cups freekeh, cooked
  • 1/4 cup dried figs, chopped
  • 1/2 cup dates, chopped
  • 1/2 cup pomegranate seeds
  • 1/4 cup red grapes, chopped
  • 1.5 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. honey
  • Juice of half of a lemon
  • Salt and pepper, to taste


  1. Combine cooked barley and freekeh in large bowl. Add fruit (figs through grapes) and mix well; set aside. To make dressing, combine olive oil, vinegar, honey and lemon juice. Add dressing to grains and fruit salad and mix well. Add salt and pepper, to taste. Serves 4-6 as side dish, or 2-4 as entrée.
