In honor of National Zucchini Bread Day, I am (re-)sharing my favorite zucchini bread recipe… EZ Freeze Chocolate Zucchini Muffins.
These muffins are so easy to make, super-tasty and freeze well for those crazy school (and work!) mornings! Plus, they are a great “food fix” when you crave “something sweet” in the AM.
This green squash doesn’t always get as much love as other veggies, but it should. Zucchini is a good source of manganese and vitamins C, K and B-6. Manganese helps with hormone production and blood clotting. Vitamin C gives our immune systems and skin health a boost, as well as helps prevent free radicals from wreaking havoc on our cells. Vitamin B-6 is important for red and white blood cell formation, energy metabolism and hormone production. And last but certainly not least, vitamin K is necessary for proper bone health and blood clotting. Just keep the peel on to reap the most health benefits!
Ingredients
- ½ cup granulated sugar
- 2 Tbsp. canola oil
- 2 tsp. vanilla extract
- 2 large eggs
- 2 cups white whole wheat flour
- 2½ Tbsp. cocoa powder
- ¼ tsp. kosher salt
- 1½ tsp. baking soda
- 2 tsp. ground cinnamon
- 1¼ cup unsweetened applesauce
- 2 medium zucchini, grated
- ¾ cup dark chocolate chips
- 1 tsp. granulated sugar (optional for topping)
- ½ tsp. cocoa powder (optional for topping)
Instructions
- 1. Preheat oven to 350 degrees F. Whisk together sugar, oil, vanilla and eggs in a medium bowl. In a separate bowl, whisk together flour, cocoa powder, salt, baking soda and cinnamon; add to wet ingredients and mix until just combined. Lightly fold in applesauce, zucchini and chocolate chips. Pour mixture into cup-lined muffin pans.
- 2. If making topping, mix 1 tsp. sugar and ½ tsp. cocoa powder in a small bowl. Sprinkle on top of muffins. Bake for 15-18 minutes, until muffins cooked through. Makes 24 muffins.
