Choco-Oat Cookie Dough Energy Balls {Recipe}

Sometimes you just need a little snack to power you through the day. These energy balls are delicious and super easy to whip up! They’re loaded with good things, like oats, ground flax seed and seed butter. Plus, they are gluten-free and nut-free, so you can pack these for lunches that need to be allergen-friendly. And, the sweetness comes solely from the dates and dark chocolate chips. If you want to reduce the sweetness even more, use cacao nibs instead of chocolate chips.

Choco-Oat Cookie Dough Energy Balls

Ingredients

  • 1/2-1 cup pitted dates
  • 2 tsp. vanilla extract
  • 1 cup old-fashioned oats
  • 1/2 cup sunflower butter (or favorite nut butter, if you prefer)
  • 1/4 cup ground flax seed
  • 1/4 cup dark chocolate chips or cacao nibs
  • 1/2 tsp. ground cinnamon
  • Pinch of kosher or sea salt

Instructions

  1. Pulse dates and vanilla in a food processor or blender until they form a sticky ball. Add remaining ingredients and pulse until combined and sticky. Wet hands and roll into 1-inch balls. Refrigerate for 15 minutes. Store in an airtight container for up to one week. Makes about 20 balls.
