No-Bake Chocolate Zucchini Energy Bites

  • 1.25 cups regular oats
  • 1/2 zucchini, shredded or grated (squeeze as much water out as possible)
  • 1-2 tsp. vanilla extract
  • 1/4-1/3 cup favorite nut or sunflower butter
  • 3 Tbsp. cocoa powder
  • 10 pitted dates
  • 1/4 cup pure maple syrup
  • 2 tsp. chia seeds

  1. Put oats in a blender or food processor; process until it is partially flour-like (want about half to be whole oats). Add grated zucchini to blender and vanilla extract to blender; blend until well combined. Add remaining ingredients and blend until all ingredients are incorporated. Using a spoon, scoop and roll into bite-sized balls (about 1-inch round); place on baking sheets lined with parchment paper. Refrigerate for at least 30 minutes or until firm. Store in a closed container in refrigerator for up to 1 week.
