These energy bites contain whole ingredients and a lot less added sugars than store-bought granola and energy bars. Plus, this version contains a hidden ingredient: zucchini. It’s a tasty way to add a little more veggie to your day!
No-Bake Chocolate Zucchini Energy Bites
Ingredients
- 1.25 cups regular oats
- 1/2 zucchini, shredded or grated (squeeze as much water out as possible)
- 1-2 tsp. vanilla extract
- 1/4-1/3 cup favorite nut or sunflower butter
- 3 Tbsp. cocoa powder
- 10 pitted dates
- 1/4 cup pure maple syrup
- 2 tsp. chia seeds
Instructions
- Put oats in a blender or food processor; process until it is partially flour-like (want about half to be whole oats). Add grated zucchini to blender and vanilla extract to blender; blend until well combined. Add remaining ingredients and blend until all ingredients are incorporated. Using a spoon, scoop and roll into bite-sized balls (about 1-inch round); place on baking sheets lined with parchment paper. Refrigerate for at least 30 minutes or until firm. Store in a closed container in refrigerator for up to 1 week.
