Strawberry-Picking + Strawberry-Orange “Soda” {Recipe ReDux}

For the past four years, I have loved being a chaperone for my kids’ preschool strawberry-picking trip in May. The first two years I went with my son’s class, and the past two years I have accompanied my daughter’s class. Since my daughter (my youngest!) starts the BIG “K” in the fall, this was my last May picking strawberries with the preschool.

I’m not sure there’s any sweeter fruit than fresh-picked strawberries. My son loves fruit. He would probably choose berries and oranges over just about any other food. My daughter and I enjoy fruit but would happily choose vegetables over fruit any time. Even still… slightly warm from the sun and practically oozing sweetness, these strawberries beckon my daughter to try a few. She shares bites with me… “Try this one, Mommy. It’s even sweeter than the last one!”

So, I knew when I saw this month’s Recipe ReDux cooking challenge theme that these fresh strawberries would be the star.

This Strawberry-Orange “Soda” is a tasty and nutritious alternative to sodas and fruit cocktail drinks made with added sugars. Thanks to the strawberries, this refreshing drink is rich in vitamin C, antioxidants (like anti-inflammatory polyphenols) and dietary fiber. Plus, you can control how much honey you add… I only added 1.5 Tbsp. and both of my kids gave it two thumbs up. In fact, both of them asked for seconds and thirds (we stopped after the second cup). This “soda” will definitely be one of our summer go-to drinks.

Strawberry-Orange “Soda” {Recipe}

Ingredients

  • 1 cup strawberries, washed and stems removed
  • 1.5 cups strawberry-flavored seltzer water
  • 1-2 Tbsp. honey (I used 1.5 Tbsp.)
  • 1 Tbsp. orange juice

Instructions

  1. Place strawberries in a blender. Blend until strawberries are liquid. Add remaining ingredients and blend well. Makes 2.5 cups.
